What Dana should have done with Eddie Alvarez and Bellator...

I was thinking...Dana should have just offered Alvarez a one-fight deal.

That way, if Bellator had matched it Eddie would have only been signed for the one fight and then would have been a free agent, no strings attached. If Bellator didn't match then Eddie fights his one fight in the UFC and then signs an extension. Simple. Right?

I've been thinking about that for a while now, and imagine there must be something wrong with that logic. What am I missing?
