It's the fundamental difference in their striking. If you watch Dos Santos fight, he rarely bobs and weaves/rolls under and with his punches. He tends to keep a straight line and uses his speed/power to deliver lunging and extremely hard punches from the outside, while at the same time, he uses that same exact speed to run out of the range of his opponents punches. Many of his fights have ended with the left hook KO and even the last fight, the one with Cain, he won it because of one thing. That lunging. very hard hitting, straight to the body. Pay attention to what he does. He'll hit people with body jabs over and over again, and he'll hit them VERY hard, at which point they'll instinctively try to cover up their body... At which point, he'll come around with a hook or a combo to their exposed head. Cain is much more technical when it comes to his boxing so he uses a lot of head movement when getting into range, but STANDS COMPLETELY still when throwing his punches and kicks, which lost him the fight last time. They traded blows, Dos Santos hit him with a left straight body shot, he dropped his hands to block it and BOOOOOOM, that overhands right just floored him. Dos Santos on the other hand, he's in and out, delivering his shots and almost never standing still. It's not magical at all, yet it works.. The best way to think of his punches is to compare them to a fencer. They hop in, strike fast, and get the hell out of his opponents range as soon as possible. Here's some pics of it. If Cain wants to win he HAS to chop down his legs to slow his movement and he has to be really careful when trying to take him down. Going for single legs and tying JDS up against the Cage, like Randy does, and beating him up like that would probably mean that Cain would win the fight. You say that..... but, throwing a body shot at the same time as somebody throws a punch at your face is gonna get you hurt, especially as they would usually lean forward. Remember footworks comes before and after a punch is throw. It's also difficult to cover your head after throwing a body shot, more so if the other guy steps forward and throws as your stepping back, ala Rampage Liddell.
